Blueberry Cookie Balls

Simple, no-bake blueberry cookie balls — easy to make in a Vitamix or food processor. Make 'em!

Ingredients
  

  • 1 cup cashews roasted, unsalted
  • 1 teaspoon vanilla extract
  • 5 dates pitted
  • 3 tablespoon maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup raw almonds
  • 1 cup rolled oats
  • 1/2 cup dried blueberries

Equipment

  • Vitamix 48-oz container (or food processor)

Method
 

  1. Add cashews, vanilla, dates, maple syrup, and cinnamon to your Vitamix (48-oz container) or food processor. If using a Vitamix, blend on high for 2–3 minutes using the tamper until a thick nut butter forms. In a food processor, run until smooth, scraping down the sides as needed.
  2. Add the almonds and oats. Pulse about 5–10 times on variable speed 4 (or pulse in the food processor) until just combined — you want texture, not a paste.
  3. Transfer to a bowl and stir in the dried blueberries by hand. Roll into 1-inch balls and refrigerate for 30 minutes before eating.

Notes

No need to soak the cashews — skip it and the recipe is even faster. A food processor is the easiest route here, but a 48-oz Vitamix container on high with the tamper works well too. These keep in the fridge for up to a week, or freeze them for longer. Great with coffee, and an easy thing to bring to a meeting.
