Monkey Butter is banana bread in spreadable form. Cashews, peanuts, maple syrup, cinnamon, and dried banana chips blended into a nut butter that's genuinely different from anything you'd find at the store.

Ingredients
  

  • 3 cup raw cashews
  • 1 cup dry roasted peanuts
  • 2 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoon cinnamon
  • 1 cup dried banana chips
Optional:
  • 1/3 cup coconut oil

Method
 

  1. Add everything except the banana chips to your Vitamix. Blend on high for 3–4 minutes, using the tamper to keep things moving.
  2. Once smooth, add the banana chips and blend for another 30 seconds.

Notes

For a smoother, more spreadable consistency, blend in the optional coconut oil. If you're avoiding peanuts, just use more cashews. You'll need at least 4 cups of nuts total for the 64 oz container — use the 32 oz container for smaller batches.
