Method
- Quarter all ingredients. Add everything except 4 of the tomatoes to your Vitamix.
- Blend on medium speed for 15 seconds, using the tamper if needed.
- Add the remaining 4 tomatoes and pulse on low for about 5 seconds to keep some chunky texture.
- Taste and adjust salt. Serve now or refrigerate in an airtight container for up to a week.

For more heat, leave some jalapeño seeds in. The two-phase blend is what gives you that restaurant-style texture — smooth base with a little chunk.
