5-ingredient California salsa

Most blender salsas come out like tomato soup. This one uses a two-phase blend — smooth base, chunky finish — and it tastes like the stuff at a good taqueria.

Ingredients
  

  • 6 roma tomatoes
  • 1/2 yellow onion
  • 1 jalapeño pepper seeded
  • 1/2 cup fresh cilantro
  • 1 lime peeled
  • 1 teaspoon salt or more to taste

Method
 

  1. Quarter all ingredients. Add everything except 4 of the tomatoes to your Vitamix.
  2. Blend on medium speed for 15 seconds, using the tamper if needed.
  3. Add the remaining 4 tomatoes and pulse on low for about 5 seconds to keep some chunky texture.
  4. Taste and adjust salt. Serve now or refrigerate in an airtight container for up to a week.

Notes

For more heat, leave some jalapeño seeds in. The two-phase blend is what gives you that restaurant-style texture — smooth base with a little chunk.
