Apple Cinnamon Walnut Butter

Homemade walnut butter with dried apple and cinnamon — no added sugar, tastes like apple pie, and takes about five minutes in the Vitamix. Good on toast, with fruit, or straight off the spoon.

Ingredients
  

  • 2 cup raw walnuts unsalted
  • 1/2 cup unsweetened dried apples chopped
  • 2 tablespoon sunflower oil or other flavorless oil
  • 1 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Method
 

  1. Add the walnuts, dried apples, and 1 tablespoon of oil to the Vitamix. Start on low speed and ramp up to high, using the tamper to push ingredients into the blades. Blend for 2–4 minutes until smooth and creamy. If the mixture is too thick, add the remaining tablespoon of oil.
  2. Stop the blender, add the cinnamon and salt, then blend on high for another 1–3 minutes until fully incorporated and the consistency is where you want it.
  3. Transfer to an airtight container. Keeps in the fridge for up to 2 weeks, or freeze for longer storage.

Notes

Container: Use a 32-oz or 48-oz narrow container. If you only have a low-profile 64-oz, double the recipe.
Salt: Can reduce to 1/4 teaspoon with similar results.
Nut swap: Almonds work as a substitute, but the walnut flavor is worth it.
Food processor: You may need up to 1/2 cup of oil to reach a smooth consistency.
