Ingredients
  

  • 1 cup (135 g) cashews, roasted, unsalted
  • 1 teaspoon vanilla extract
  • 5 whole dates, pitted
  • 3 Tablespoons maple syrup
  • ½ teaspoon ground cinnamon
  • ¼ cup (35 g) raw almonds
  • 1 cup (88 g) rolled oats
  • ½ cup (75 g) dried blueberries

Method
 

  1. Soak cashews in hot water for 30 minutes before blending.
  2. Add cashews, vanilla extract, dates, maple syrup, and cinnamon to the blender container.
  3. Blend on high speed for 2-3 minutes, using the tamper to push ingredients from the corners into the blade. Blend until a thick nut butter forms.
  4. Add almonds and oats to the mixture. Pulse on variable speed 4 until combined (5-10 pulses with tamper).
  5. Transfer mixture to a bowl and hand mix in the dried blueberries with a spoon.
  6. Form 1-inch balls by packing the mixture with your hands.
  7. Refrigerate for 30 minutes before serving.
