Carrot Cake Bites

These no-bake energy bites taste surprisingly like actual carrot cake — sweet, spiced, and satisfying — and they hold together well enough to toss in a bag and forget about until you need them.

Ingredients
  

  • 1 cup pitted dates (about 175g)
  • 1 tablespoon maple syrup
  • 1 cup shredded carrots
  • 1/2 cup walnuts
  • 1/2 cup pecans
  • 2 teaspoons cinnamon
  • 3 tablespoons flax seeds
  • 1 tablespoon chia seeds
  • 1/2 cup rolled oats plus another 1/2 cup for rolling
  • 1/4 cup shredded coconut for rolling (optional)
  • 1/4 cup white chocolate chips melted, for drizzling (optional)

Equipment

  • Vitamix blender (any container) or food processor

Method
 

  1. Add all ingredients except the rolling oats and coconut into your Vitamix or food processor. If using a Vitamix, start on variable speed 1 and ramp up to 10, then blend on high for about 30 seconds, using the tamper to push ingredients into the blade. Stop before it turns into a paste — you want to see some texture from the nuts and carrots.
  2. Check the mixture. It should hold together when pressed but not feel wet or sticky. If it seems too moist, stir in a little extra flax or chia seeds and let it sit for a minute to absorb.
  3. Spread the extra oats (and coconut, if using) on a plate. Roll the mixture into balls — roughly a heaping tablespoon each — then roll them through the oats or coconut to coat. This keeps them from sticking together.
  4. If you're drizzling with white chocolate, melt it now and drizzle over the finished bites. Let them set for a few minutes before storing.

Notes

Lenny & Shalva's note: A food processor makes this easier — the Vitamix works fine but takes a little more attention to avoid over-blending. Watch the texture closely either way; a few extra seconds can take you from pleasantly chunky to baby food. Store in an airtight container in the fridge for up to a week, or freeze them for up to a month. They're great straight from the freezer too.
