This is not only the very best dairy-free, egg-free Caesar dressing — it's the best Caesar dressing, period. Cashew-based with all the classic flavors: lemon, garlic, capers.

Ingredients
  

  • 1 cup raw cashews
  • 1/2 cup water
  • 4 tablespoon oil of choice
  • 1/4 lemon peeled
  • 1 tablespoon Dijon mustard
  • 2 garlic cloves peeled
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 2 teaspoon capers
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. If you're not using a high-powered blender, soak the cashews in water overnight and drain before using.
  2. Add all ingredients to the Vitamix and blend on high for about 1 minute, until smooth and creamy.
  3. Taste and adjust salt, pepper, or lemon as needed. For a thinner dressing, add water a splash at a time and blend briefly to combine.

Notes

Stores well in an airtight container in the fridge for up to 5 days. For a nut-free version, swap the cashews for raw sunflower seeds. To keep it WFPB, skip the oil and use water instead.
