- If you're not using a high-powered blender, soak the cashews in water overnight and drain before using.
- Add all ingredients to the Vitamix and blend on high for about 1 minute, until smooth and creamy.
- Taste and adjust salt, pepper, or lemon as needed. For a thinner dressing, add water a splash at a time and blend briefly to combine.

Stores well in an airtight container in the fridge for up to 5 days. For a nut-free version, swap the cashews for raw sunflower seeds. To keep it WFPB, skip the oil and use water instead.
