  • 1 can (410 g) diced tomatoes
  • 2 roma tomatoes, halved
  • 1 medium carrot, halved
  • 1/2 of an 8.5 oz jar (70 g) sun-dried tomatoes, drained
  • 1.5 Tablespoons (15 g) onion
  • 1 garlic clove
  • 1.5 Tablespoons fresh thyme
  • 1 Tablespoon tomato paste
  • 1 teaspoon flax meal
  • 1/2 cup milk of choice
  • Salt and pepper to taste

Method
 

  1. Add ingredients to a high-performance blender in the order listed.
  2. Blend on high for 6 minutes or use the soup setting if available.
  3. Pour into bowls and serve hot.
