Frozen Mezcal Paloma

Smoky, tart, and properly slushy — not the watered-down version you'd find if you went looking. The ratio of citrus to ice to mezcal is doing more work than it looks like.

Ingredients
  

  • 3 ounces mezcal (2 shots)
  • 1/2 grapefruit, peeled
  • 1/2 lime, peeled
  • 2 1/2 cups ice
  • 1 tablespoon honey
  • 2 ounces lime sparkling water (splash, to top)
  • chili lime salt or Tajín, for rim (optional)
  • lime wedges, to garnish

Equipment

  • Vitamix blender (32-oz container or larger)

Method
 

  1. If rimming your glasses, run a lime wedge around the edge and dip in chili lime salt or Tajín. Set glasses aside.
  2. Add mezcal, grapefruit, lime, ice, and honey to your Vitamix. Blend on high for about 25 seconds until smooth and slushy.
  3. Pour into prepared glasses, top with a splash of lime sparkling water, and garnish with a lime wedge.

Notes

Lenny & Shalva's note: The grapefruit does most of the work here — make sure you're using a ripe one or it'll taste flat. If your grapefruit is on the smaller side, use the whole thing. Don't overblend; 25 seconds gets you that slushy texture. Go longer and it starts to melt into something closer to a smoothie. And don't stress if life gets in the way — ours sat in the fridge for 10 hours and was still a delicious, chilled drink when we finally got around to it.
