Mango Lassi

We made this for the first time and it genuinely surprised us. Shalva's dairy-free mango lassi is creamy, cold, and just a little salty in the best way — the kind of thing that feels like a treat but takes two minutes to make.

Ingredients
  

  • 1 1/2 cups frozen mango chunks
  • 1 cup plain cashew yogurt
  • 1/2 cup milk of choice
  • 1 tablespoon honey
  • 1/4 teaspoon fine sea salt
  • cardamom powder, for topping optional
  • crushed pistachios, for topping optional

Equipment

  • Vitamix blender (32-oz or 64-oz container)

Method
 

  1. Add the frozen mango, cashew yogurt, milk, honey, and salt to your Vitamix. Blend on high for about 30 seconds until completely smooth.
  2. Pour into glasses. Top with a pinch of cardamom and a handful of crushed pistachios if you're using them.

Notes

Lenny & Shalva's note: The salt is not optional in spirit — it's what makes the mango flavor pop. Don't skip it. We try to keep things 100% plant-based around here, but we used honey in this one to keep it close to the classic. If you're strictly vegan or just don't do honey, maple syrup or agave work fine — just start with a little less since they can run sweeter. If your mango isn't very sweet, add another teaspoon of your sweetener and taste before pouring. This is best while it's cold and frothy, but it'll keep in the fridge for a day — just give it a good stir or quick re-blend before drinking.
