Split Pea Soup

A hearty, protein-packed split pea soup that kids will actually eat. The smokehouse almonds on top are the secret — they add a smoky, meaty depth without any animal products. Blending a portion of the soup in your Vitamix gives it a silky texture while keeping some chunkiness.

Ingredients
  

Sauté
  • 3 whole carrots diced
  • 3 celery sticks diced
  • 2 yellow onions diced
  • 1 tablespoon plant-based butter such as Miyoko's
Soup
  • 2 cup dried split peas
  • 8 cup vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • freshly ground black pepper to taste
  • 2 bay leaves
Garnish
  • 1/2 cup smokehouse-flavored roasted almonds crushed

Method
 

  1. Dice carrots, celery, and onions (or use the dry chop method in your Vitamix on Variable Speed 1). Heat butter in a large pot over medium heat, add vegetables, and sauté for 5 minutes until softened.
  2. Add split peas, vegetable broth, thyme, salt, pepper, and bay leaves. Bring to a simmer and cook for 60 minutes, stirring occasionally. Optional: transfer about 30% of the soup to your Vitamix, blend on high for 10 seconds, then stir back in for a creamier texture.
  3. Ladle into bowls and top with crushed smokehouse almonds. Serve hot.

Notes

Dried split peas need the full cook time to soften — don't rush it. For a smoother soup, cook longer or blend a larger portion. The smokehouse almonds can be skipped for nut allergies, but they really do make this dish.
