The viral NYT cinnamon date smoothie, made dairy-free with a smart swap: apple cider vinegar stands in for buttermilk and gives you the same tangy bite without any dairy. Thick, warming, and naturally sweet from dates and banana.

Ingredients
  

  • 1 cup unsweetened almond milk
  • 1/2 teaspoon apple cider vinegar
  • 3 medjool dates, pitted
  • 1 tablespoon flaxseed meal or whole flaxseeds
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 frozen banana
  • 1 cup ice cubes
  • 1 tablespoon plain cashew yogurt optional, for swirling into the glass

  • Vitamix (64-oz container)

Method
 

  1. Add the almond milk, apple cider vinegar, dates, flaxseed meal, cinnamon, vanilla, and salt to your Vitamix. Blend on high for 30–45 seconds until the dates are fully broken down.
  2. Add the frozen banana and ice. Blend again on high until smooth and thick, about 30 seconds.
  3. Pour into a glass. If you're using cashew yogurt, swirl it around the inside of the glass before pouring, or dollop on top.

Notes

Lenny & Shalva's note: Don't skip the ACV — it's only half a teaspoon but it does real work here, mimicking the tang of buttermilk and helping your body absorb the nutrients in the dates and flax. If your dates are on the dry side, soak them in warm water for 5 minutes before blending. Smoothie keeps in the fridge for a few hours but is best right out of the blender — the ice will melt and thin it out over time.
