Tropical Carrot Refresher Juice Blend

You can put carrots in a blender — you just need to bring the right ingredients along. Pineapple for sweetness, lemon and ginger for brightness, water and ice to loosen it up. All the fiber stays in, so it's more filling than a slow-juiced version and makes almost no waste.

Ingredients
  

  • 1 1/2 cup water
  • 3 cup pineapple peeled and cut into chunks
  • 1 1/2 cup baby carrots
  • 1 lemon slice 1/4-inch thick, peel on
  • 2 1/2 cup ice cubes
  • 1 tablespoon fresh ginger peeled, optional

Method
 

  1. Add all ingredients to the Vitamix in the order listed. Blend on high for 60 seconds until smooth. Pour into glasses and serve cold.

Notes

Smoother texture: Blend everything without the ice first, then add the ice and blend briefly.
Frozen pineapple: Works just as well as fresh.
Storage: Keeps in the fridge for two days. Give it a shake or quick blend before serving.
