Vegan chocolate chip banana bread

Banana bread made with overripe bananas, whole wheat flour, and dairy-free chocolate chips. The Vitamix handles the wet ingredients — no mixer needed. Moist, not too sweet, and genuinely hard to stop eating.

Ingredients
  

Wet Ingredients
  • 4 medium bananas overripe, peeled
  • 1/2 cup sunflower oil
  • 1/2 cup coconut sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
Dry Ingredients
  • 1 1/2 cup whole wheat flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup dairy-free chocolate chips

Method
 

PREP
  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
BLEND
  1. Add the bananas, oil, coconut sugar, vanilla, and cinnamon to the Vitamix. Ramp from variable speed 1 to 10 and blend for 15–30 seconds until evenly mixed.
STIR
  1. Whisk the flour, baking powder, and baking soda together in a large bowl. Pour in the blended banana mixture and fold until just combined — don't overmix. Fold in the chocolate chips.
BAKE
  1. Pour batter evenly into the loaf pan. Bake at 350°F for 30–45 minutes until a toothpick comes out clean. Set a timer for 30 minutes and check every 5 minutes after that. Let cool for 15 minutes before slicing.

Flexible recipe: Swap in any neutral oil, any sugar (brown, white, coconut), any flour (almond, oat, gluten-free all-purpose), or any mix-ins (nuts, seeds, raisins). If skipping mix-ins, dust the top with cinnamon sugar before baking.
Watch the clock: Start checking at 30 minutes. Undercooked beats overcooked. If the top is browning and the middle is still gooey, cover loosely with foil.
