Blueberry Oatmeal Pancakes

Vegan pancakes made from whole oats and blended in the Vitamix — no flour, no eggs, no dairy. Banana and dates do the sweetening. Blueberries are folded in at the end.

Ingredients
  

  • 1 1/2 cup rolled oats
  • 1 banana
  • 1 cup unsweetened milk of choice
  • 1/4 cup aquafaba liquid from a can of chickpeas
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 2 teaspoon vanilla extract
  • 2 pitted dates
  • 1/4 cup blueberries fresh or frozen

Method
 

  1. Add the oats, banana, milk, aquafaba, baking powder, cinnamon, vanilla, and dates to the Vitamix. Blend on high for about 1 minute until smooth. Gently fold in the blueberries by hand.
  2. Heat a non-stick skillet over medium heat. Grease lightly if needed. Pour about 1/4 cup batter per pancake and cook until bubbles form and the edges look set, about 2–3 minutes. Flip and cook another 1–2 minutes.
  3. Serve warm with maple syrup, nut butter, or fresh fruit.

Notes

Thinner batter: Add an extra 1/4 cup of milk.
Aquafaba swap: 1/4 cup plain unsweetened plant-based yogurt works too.
Mix it up: Swap blueberries for raspberries, chopped strawberries, or chocolate chips.
