Frappuccinos!

We set out to make a Starbucks Frappuccino at home without the syrups. The two secrets: a Vitamix and xanthan gum. Dairy-free milk, canned coconut milk for creaminess, and dates instead of sugar. Norman Lear used to say he went to bed every night excited about the coffee he'd have in the morning. These do that.

Ingredients
  

  • 1/2 cup strong coffee chilled
  • 1/2 cup milk of choice
  • 1 tablespoon canned coconut milk
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon xanthan gum
  • pinch of salt
  • 2 pitted dates or to taste
  • 1 cup ice heaping
For Mocha Variation
  • 1 tablespoon cocoa powder
For Coconut Variation
  • 1/2 cup coconut toasted or untoasted
  • additional sweetener to taste if using unsweetened coconut
For Green Tea Variation
  • 1 tablespoon matcha powder
For Pumpkin Spice Variation
  • 1 tablespoon pumpkin spice
For Protein Variation
  • 1 scoop protein powder omit or reduce dates if using sweetened protein powder

Method
 

  1. Add all ingredients to the Vitamix in the order listed. Blend on high for 30 seconds until smooth and frothy. Pour into a tall glass and serve.

Notes

Chill the coffee first: Warm coffee will melt the ice and throw off the texture.
Container size: Works in any container. This is proof you can make 12-oz drinks in the low-profile 64-oz with the right recipe.
