- Optional: If making cornmeal from scratch, blend 3/4 cup popcorn kernels on high for 60 seconds until you get a fine cornmeal texture.
- Add all ingredients except poppy seeds to your Vitamix. Start at low speed and ramp up to high, blending for 45 seconds. Add poppy seeds and pulse a few times to incorporate.
- Preheat and grease your waffle maker. Pour 1/2 cup batter per waffle and cook according to your machine's instructions until golden and crisp. Repeat with remaining batter.

Notes
Batter should be slightly thick — if it's too thick to pour easily, add a splash more milk. Fresh cornmeal from popcorn kernels gives a slightly fresher flavor, but store-bought works great. Makes about 3 waffles.
