Lemon Poppyseed Waffles

Cornmeal waffles with bright lemon and a little poppy seed crunch — all mixed in the blender. Crispy outside, tender inside, and a step above your usual weekend waffle. Vegan-friendly and naturally gluten-free.

Ingredients
  

  • 1 cup milk of choice
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon coconut oil
  • 1/4 whole lemon with rind
  • 3/4 cup cornmeal
  • 1/2 cup almond flour
  • 1 tablespoon coconut sugar
  • 2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon poppy seeds

Method
 

  1. Optional: If making cornmeal from scratch, blend 3/4 cup popcorn kernels on high for 60 seconds until you get a fine cornmeal texture.
  2. Add all ingredients except poppy seeds to your Vitamix. Start at low speed and ramp up to high, blending for 45 seconds. Add poppy seeds and pulse a few times to incorporate.
  3. Preheat and grease your waffle maker. Pour 1/2 cup batter per waffle and cook according to your machine's instructions until golden and crisp. Repeat with remaining batter.

Notes

Batter should be slightly thick — if it's too thick to pour easily, add a splash more milk. Fresh cornmeal from popcorn kernels gives a slightly fresher flavor, but store-bought works great. Makes about 3 waffles.
