    I substituted soy sauce with tiparos fish sauce . Actually it was an imported brand, called Squid. Then a little hot .paprika spread on for it’s coloring beside it’s peppery flavor .

    I didn’t have stevia so I added a pinch of sugar and threw in a couple of small squirts of Sriracha to add another layer of complexity. Fantastic sauce for the tuna.

    San-J makes organic soy sauce and tamari. I don’t eat soy but when soy is fermented as in soy sauce, tamari, miso and natto, it becomes healthy. http://www.huffingtonpost.com/dr-mercola/soy-health_b_1822466.html

    You could substitute organic tamari for the soy sauce. Healthy, no GMOs, works for the umami thing.

      Yeah? I don’t eat soy, but love soy sauce. Never actually made the connection that soy sauce IS soy.

      What’s your recommendation for organic tamari, Elizabeth?

      I’m going to try Braggs coconut aminos instead of soy. Has anyone tried this?
