Basically: It’s chickpeas, tahini, lemon, salt, cumin, water, garlic, salt, and pepper, blended on high speed with the tamper. There are tons of varieties, but the traditional is where you should start.
Why it’s great: Tastier and cheaper than store-bought. Less waste, too.
Four tips for best results:
First recipe: Traditional hummus
1 (8-ounce) can chickpeas (aka garbanzo beans)
½ cup tahini
1 lemon, peeled
4-6 cloves garlic
2 tsp. cumin
¼ cup ice water
salt to taste
black pepper to taste
Add all ingredients to your Vitamix. Put the top on. Take lid plug out, put the tamper in. Start on variable speed and quickly ramp up to the highest speed. Use the tamper to push the ingredients from the corners down into the blades. Blend until smooth. Garnish with olive oil or lemon peel or parsley or red pepper or all! Enjoy!
