
Blueberry Oatmeal Pancakes

- Add the oats, banana, milk, aquafaba, baking powder, cinnamon, vanilla, and dates to the Vitamix. Blend on high for about 1 minute until smooth. Gently fold in the blueberries by hand.
- Heat a non-stick skillet over medium heat. Grease lightly if needed. Pour about 1/4 cup batter per pancake and cook until bubbles form and the edges look set, about 2–3 minutes. Flip and cook another 1–2 minutes.
- Serve warm with maple syrup, nut butter, or fresh fruit.
