These are some of the best waffles I’ve ever made – very tender and certainly company worthy! I did read the comments beforehand and made a few adjustments, but not a lot. I used masa harina instead of the cornmeal, and whole almond meal as that’s what I had on hand. I doubled the coconut oil to help them out of the waffle iron and used an egg for some more protein. I had to add some more almond milk after the first mixing, and for the last few gos I threw in some shredded coconut, just to try it. Both were terrific. My only complaint is missing a few of the lemon seeds before blending and having to spit them out while I eat. Recipe saved for when my sistah comes to visit!

This was a huge disappointment and disaster. I was very excited by the recipe and the positive reviews, and I make waffles all the time, so I was excited to try something new. These were meh/bad in flavor and the biggest pain to make. The initial step with the blending was a breeze, but they stuck so terribly to my waffle iron (even with tons of spray) that I had to spend minutes getting the tiny particles of the iron, so I could start the next. I’m sad that I doubled the recipe since I was so fed up after the third waffle heap that I ended up tossing the rest of the batter. Nornally, I would simply switch to pancakes, but this batter and its product wasn’t that flavorful anyway. We tried to eat the scraps. (My partner was a trooper and finished his plate.) I tried to eat mine, but it was like chewy, disintegrating, slightly bitter cornbread crumbs. I eventually served the scraps to our yard critters. I hate, hate, hate wasting food. But this was not a winner at all. I suppose there was a chance of user error, but I cook from scratch daily and frequently make blender waffles with no issue. I think this one was simply a dud.
Oh no! I can tell you know what you’re doing with the quick-thinking pivot to pancakes. If anything this recipe should be too flavorful (it’s very lemony). I will make them again this weekend to test, maybe there’s an error somewhere in the recipe?
From my experience your waffle maker needs to be amazing in order to make vegan ones. My isnโt and Iโm not a vegan, so I always add an egg and the waffles are fine. I n this recipe I needed to grease with every batch not to stick though.

I didnโt have any cornmeal, so used masa harina (corn flour). Maybe gives them a lighter texture?? Anyway, we KEEP MAKING THEMโผ๏ธ๐คฉ

I loved that these were made in the vitamin, but unfortunately, these were a fail for me. I had to pry my waffle iron open with a knife and the waffle had split and stuck to both sides. I have a nonstick iron and generously brushed coconut oil on both sides before baking. Had to punt and ended up making pancakes. Could you share the waffle iron you have?

Love these waffles. My batter seems to be really thick. I have trouble getting it out of the Vitamix container. I did add a little more almond milk (homemade) but was wondering if this is how it should be.
The homemade almond milk is the culprit! Store-bought almond milk is much more watered down. Add a little water and you should be good!

This recipe turned out.. ok
I made the recipe +1/2 to make extra waffles, but since they aren’t fluffy and are so dense we were full after the first waffle and a half or so. To me the flavor is lackluster and I would definitely cut down on the poppyseed a bit unless you really love poppyseed.
Before making the waffles I smelled & tasted the batter and it was pretty great, so maybe our waffle iron/my cooking kept them from greatness. Also the lemon seemed to disappear too much in the baking, but again that might have been on my end.
Our Belgian waffle maker didn’t work out because the tops of the waffle weren’t cooked & I suspect that’s due to the waffle not fluffing up and filling the space properly. If you are going to do this you might want to use a thinner waffle maker. The waffle itself was crumbly and fell apart before it got to the plate, but that’s probably from the top not getting cooked all the way through.
Another note, we could not make this Vitamixโข recipe in our Vitamixโข because we do not own a Vitamixโข and had to use our own non-Vitamixโข blender, so maybe that is a part of the reason this Vitamixโข recipe didn’t work out so well for us.
If you are ever in Seattle look up the Sunlight Cafe on Roosevelt. Their vegan lemon poppyseed waffle sets the bar very high by my taste buds.
I’m so sorry to hear this, Jim! We just made these again last week (we like to revisit our recipes to make sure they still hold-up) and they were delicious.
Lenny doesn’t let me use the waffle-iron, I’ve messed up more than my fair share of waffles over the years. This recipe is not necessarily “fluffy” as it’s a cornmeal base, but they should be light and lemony.
This is not a Vitamix-specific recipe, any blender/mixer should do the trick. We’re planning a trip to Seattle this summer and will absolutely take your recommendation, thanks!
Never been a waffles guy, but these are superb. Even better with coffee.
