
Shaved Radish & Cucumber Salad with Lemon-Dill Vinaigrette
This salad is what happens when two quietly great vegetables finally get a dressing worthy of them. Cucumber and radish don't need much — they're crisp, water-rich, and just slightly sharp on their own — but a properly emulsified vinaigrette changes everything. This one comes together in the Vitamix in about thirty seconds: bright lemon, fresh dill, a hit of Dijon for body, a little honey to balance it out, and good olive oil. The result is a light, punchy dressing that clings to the thin-sliced vegetables instead of pooling at the bottom of the bowl. The thin-slice disc on your food processor handles the prep in under two minutes, so the whole thing is on the table faster than you'd think. What you end up with is a salad that eats like a side but works beautifully as a base — add chickpeas or cooked quinoa and call it lunch, or set it next to a grain bowl and call it dinner. Works any time of year, but it was made for summer.
