Pink Grapefruit and Strawberry Sorbet
Sorbet made in a Vitamix is less a recipe than a ratio: enough frozen fruit to hold structure, just enough liquid to get the ingrediednts moving. Grapefruit does the heavy lifting here. It brings acid and a faint bitterness that keeps the whole thing from reading as a smoothie, and strawberries round out the edges with sweetness and color. The texture lands as a scoopable sorbet. Winter is grapefruit season, so this is a January dessert as much as a July one, and frozen strawberries make it possible year-round. Ninety seconds of tamper work is the whole technique. Serve it in a chilled bowl the moment it comes together, or portion it into containers and pull one out on a weeknight when you want something cold that isn't a pint of ice cream.
