Bowtie Pasta in Lemon-Garlic Silken Cream with Broccoli
This is the pasta you make when you want something creamy on the table without a carton of cream or a wedge of cheese. Silken tofu does the heavy lifting: blended with sautéed onion and garlic, a generous pour of nutritional yeast and a whole peeled lemon, it turns into a glossy, savory sauce with the richness of an Alfredo and a brightness Alfredo never had. The Vitamix warms the sauce as it blends, so it’s ready about when the pasta is. Starchy pasta water is the real trick here — it loosens the sauce and helps it cling to every fold of the bowties. Broccoli goes into the pasta pot for the last few minutes, so dinner comes together with one pot, one skillet and a blender. It works year-round, but it earns its keep on cold weeknights. Kids tend to treat it like mac and cheese, which nobody is complaining about.
