Dark Chocolate Avocado Pudding
This is the pudding that disappears before anyone asks what’s in it. Two avocados form the base — not as a health statement, but because avocado fat and texture is genuinely the closest thing to a dairy custard that a blender can produce. Brewed coffee deepens the chocolate flavor without tasting like mocha; Medjool dates handle all the sweetening; dried coconut adds body that keeps it from sitting too thin. The whole thing comes together in under a minute in a Vitamix. Serve it the same day for the cleanest flavor and a consistency closer to mousse. Chill it overnight and it firms into something you could plate convincingly at a dinner party. If you have skeptical kids in the house, call it chocolate pudding and move on. They’ll never know.
