
Chilled Carrot-Coconut Curry Soup
This is a no-cook soup that hands all the work to the Vitamix: raw carrots, half a lime, garlic, and a spoonful of red curry paste get pulverized under friction into something completely smooth, with ice keeping it cold enough to serve straight from the pitcher. The blend comes out uniform by design, which means texture is something you add back afterward — a scatter of toasted coconut or chili crisp on top, or a few reserved carrots stirred in. Red wine vinegar and lime, peel and all, cut the richness of the coconut and keep the carrots’ sweetness in check, and the curry paste stays in the background rather than taking over. It lands somewhere between a chilled soup and a savory smoothie: a warm-weather lunch, or a first course you can put together while the rest of dinner comes along. Blend, taste, adjust the salt and acid, and finish however you like.
