
Monkey Bars (No-Bake Peanut Butter Banana Oat Bars)
These are the kind of bars you make on a Sunday and reach for all week. Dates and maple do the binding, peanut butter carries the flavor, and a food processor does the work — no oven, no bake time, nothing to wait on but a stint in the fridge. Rolled oats and walnuts keep the texture substantial rather than candy-bar soft, while dried banana chips add a chewy-crisp contrast and a little sweetness that reads like the fruit it came from. A handful of mini chocolate chips is optional but hard to argue with. The method is forgiving: pulse, press, chill, slice. Press the mixture firmly and give it a real two hours in the fridge, and the bars hold their shape in a lunchbox or a jacket pocket. They keep for a week refrigerated, and the base takes well to swaps — almond butter, pecans, dried cherries, whatever’s in the cupboard.
