
No-Bake Strawberry and Chocolate Chip Oat Bars
These are the bars you make on Sunday and stop thinking about for the rest of the week. Dates do the binding, oats do the body, and a food processor does the rest in about ten minutes — no oven, no thermometer, no waiting on anything to bake. Freeze-dried strawberries hold their tartness and their color instead of going leathery the way most dried fruit does, and the mini chips stay in distinct pockets as long as you pulse them in at the very end. What makes these useful is what’s missing: no nuts, so they clear most school policies, and nothing that needs refrigeration for a morning in a backpack. Filling and dense the way a Clif bar is, sweet the way a date is. Swap the strawberries for dried cherries or chopped apricots and nothing about the method changes.
