What kind of coconut milk do you recommend using?

It is in a carton or a can?

We are using a full fat canned version (often found in the asian section of your grocery store).

I just made a newbie mistake! I had bananas ( not frozen) and i made the vanilla nice cream! Not even close to your demo! I will make sure I freeze my bananas next time. I did have a win YEAH yesterday I made the Vitamix Broccoli Cheese Soup! My hubby loved it! I have had my Vitamiz since Sunday and I used it everyday! I gave it only 2 stars since I had a fail! I will try it again with frozen bananas!

Could you use almond milk instead of coconut milk?

Yes, but the coconut milk is what gets you that creamy texture and consistency.
